Building a relationship with two or three trusted local suppliers, rather than switching based on whoever is cheapest that week, tends to produce more consistent quality — suppliers who know a business will return are more careful about what they set aside.

Buying in season, when local produce is at its most available, usually means better quality at a lower cost than sourcing out-of-season ingredients from further away. Adjusting the menu slightly around what’s genuinely fresh each season keeps both cost and taste in check.

A quick visual and smell check on delivery — rather than assuming every batch matches the last — catches quality issues before they reach the kitchen and, eventually, the customer’s plate.
